Vegan Breakfast Burrito

  • 1 large whole wheat tortilla

  • 1/2 cup of tofu, crumbled

  • 1/4 cup of black beans, drained and rinsed

  • 1/4 cup of diced tomatoes

  • 1/4 cup of diced green bell peppers

  • 1/4 avocado, sliced

  • 1/4 cup of salsa

  • 1/4 teaspoon of cumin

  • Salt and pepper to taste

  • Cooking spray or 1 tablespoon of oil


  1. In a skillet, heat up the cooking spray or oil over medium heat.

  2. Add the crumbled tofu, black beans, tomatoes, and green bell peppers to the skillet. Season with cumin, salt, and pepper.

  3. Cook for 5-7 minutes, stirring occasionally until the veggies are tender and the tofu is slightly browned.

  4. Warm the tortilla in a separate skillet or in the microwave for 10 seconds.

  5. Spread the salsa onto the centre of the tortilla.

  6. Spoon the tofu and veggie mixture onto the salsa.

  7. Top with sliced avocado.

  8. Roll up the tortilla, tucking in the ends to make a burrito.
